Pigato - Le Rocche del Gatto

Description:

Bianco DOC obtained from a careful vinification with maceration of Pigato grapes from vineyards registered with the DOC Riviera Ligure di Ponente production. And ‘one of the noblest Ligurian white wines and its name derives from the dark spots that may appear sull’acino aging and which in local parlance are called “pighe” and grapes and wine Pigato pigata. It is vinified as a red wine fermentation for three weeks (until 2010 the maceration was a week) in contact with the skins so that they have the maximum of the organoleptic characteristics of the grape variety, giving it greater minerality and more complex and harmonious flavors. After malolactic fermentation following a long stay on the lees: batonnage and micro oxygenation accompany the wine in its maturation in large stainless steel tanks until bottling sensitive, the summer following the harvest.

Considerations: shows good evolution prerogatives within two or three years after harvest. in cool storage, away from light and heat to a temperature of around 18 ° C
