Fermentation: soft pressing with carbon dioxide saturation, fermentation in stainless steel tanks at controlled temperature, below 17°C.

Ageing: on fine lees in stainless steel tanks for 5 months

Refining: in bottle for at least 3 months

Description: straw yellow, elegant fruity notes of peach and flowers such as wisteria and broom. Dry palate, round, with a citrusy acidity that makes it particularly pleasant. Long citrusy finish.

Food pairings: Minutolo Igt Salento can have a wide range of pairings, from seafood starters and pasta courses, to fish main courses and white meat.

Service temperature: 10-12°C
